Super easy : make, freeze, eat.
Start by lining the base of a spring form tin with greaseproof paper.
For the base
In a food processor, blend 2 cups raw almonds, 4 tbsps liquified coconut oil, 6 softened medjool dates, 1 tsp pure vanilla
Press into springform tin and put in freezer.
For the topping
In a nutribullet (or similar), blend 2 cups soaked cashews (soak in water until softened), 6 tbsps liquified coconut oil, 2 cups blackberries, 1/4 cup maple syrup, 1 banana, juice of 1 lemon, 1 tsp pure vanilla
Spread over the base, decorate with blackberries and put in freezer.
Keep in freezer till needed. Turn out onto a serving plate while still frozen, defrost at room temp for around 30 mins, then serve with sprinkles of chopped mint and blackberry or elderflower puree, if desired.
